Overnight Breakfast Casserole

4 slices reduced calorie whole wheat bread, cubed
2 ounces (about 2 slices) low-fat ham sliced into strips
2 ounces 2% cheddar cheese, shredded
1 cup frozen chopped broccoli, thawed and drained
1 cup fat-free egg substitute, (or 4 eggs)
2 cups skim milk
1 tsp. Worcestershire sauce
1 tsp. powdered mustard
1/2 tsp. curry powder (optional)


Coat a 9 in. square nonstick pan with nonstick spray. Spread the bread cubes over the bottom of the pan. Layer the ham, cheese and broccoli.

In a med. bowl, beat egg substitute, milk, Worcestershire sauce, mustard, and curry. Pour over the cheese etc. Cover and refrigerate overnight.

Bake uncovered at 350º until eggs are set, about 30 minutes.

Serves 4

Exchanges: 2 meat, 1 bread/starch, 1/2 vegetable, 1/2 milk, 1/2 fat. ** If eggs are used fat exchange will be 1 fat
