Red Beans and Ham in One Pot by Imp
3 cans (15 and 1/2 ounces each) rinsed and drained kidney beans
1 can (14 and 1/2 ounces) Mexican or Cajun Stewed Tomatoes
2 cups diced and fully cooked ham-low fat preferred
1/2 cup water
1/2 teaspoon garlic powder
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1/4 teaspoon pepper
Hot Pepper Sauce to taste
In a large Dutch oven bring all ingredien s to a boil. Reduce; cover and simmer for 30 to 45 minutes.
YIELD:10 servings
Nutrition Analysis: one 3/4 cup serving equals 207 calories, 474 mg sodium, 13 mg cholesterol, 32 gm carbohydrates, 15 gm protein, 2 gm fat.
