Vanilla and Blackcurrant Ice Cream

4 Tbspns agar agar flakes or powder
1 cup unsweetened apple and blackcurrant juice
1 cup blanched ground almonds
1 Tbspn Vanilla
2 cups hot soy milk
1 tsp cinnamon
1/4 vegetable oil
4 sachets ( 8 tspns) powdered sweetener


Bring agar agar and fruit juice to boil, simmer a few minutes. Blend together juice mixture and almonds until creamy. Add vanilla, soy milk and cinnamon gradually, beat well.

Slowly drizzle in the oil, beating until mixture is creamy. Add sweetener. Freeze as above or place in ice-cream machine
