Black Bean Dip

Black Bean Dip

3 (16 oz.) cans black beans (drain 1 can)
1 (16 oz.) can of corn (drained)
3 Roma tomatoes (chopped and seeded)
3 limes
1/2 red onion (chopped)
fresh cilantro, to taste
salt and pepper, to taste
cumin, to taste
garlic powder, to taste


Pour together the black beans, the corn, the tomatoes and the onions. Squeeze the limes into the mixture. Add the cilantro, salt and pepper, cumin, and garlic powder to taste. Serve with tostada chips (yellow corn chips).

***notes: Can use GOYA black bean soup (not easy to find sometimes even here in Texas) but any black bean soup is ok. The original recipe just calls for black beans, but the soup is better.
