Chefshell's Rockin bacon and Cheese Dipper 
2 cups grated extra sharp cheddar cheese 
1/4 cup Dijon mustard 
2 tbsp. butter or margarine 
1/4 tsp. ground fresh pepper 
1/2 cup dry white wine 
3 tbsp. scallions, chopped 
6 slices bacon, cooked and crumbled into small pieces 
In a blender or food processor, blend cheese, butter or margarine, mustard and pepper until finely chopped. 
Heat the wine to a boil. 
With the blender or processor running, pour liquid into the cheese and continue to mix until finely fairly smooth.  
stir in the scallions and bacon. 
Transfer to a serving bowl. Chil 2 hours. Let stand 1 hour or until room temperature.  
Can reheat at 350 degrees for 15 minutes or until melted for hot dip. Serve with crackers or bruschetta.
