Strawberries with Brown Sugar-and-Sour Cream Dip

1 (16 ounce) container sour cream
1/3 cup maple syrup
3 tablespoons dark brown sugar
Garnishes: sliced strawberries, fresh mint
sprig, orange slices
Fresh whole strawberries


Thicken sour cream (see note). Discard liquid in bowl, and whisk together thickened sour cream, maple syrup, and dark brown sugar until blended. Garnish, if desired. Serve with strawberries.

Yield: 1 1/2 cups

NOTES : Yogurt and sour cream have a thicker consistency when excess liquid is removed. This procedure takes 24 hours, but it yields perfect results for dipping fresh fruit.

Line a fine wire-mesh strainer with a coffee filter, and place over a bowl. Spoon yogurt or sour cream into filter. Cover with Plastic wrap, and chill at least 24 hours. Yogurt or sour cream may be chilled up to 72 hours. It gets thicker the longer it chills. Discard liquid in the bowl.
