South of the Border Tomato Salsa
2 large ripe tomatoes cored and cut into 1/4 inch cubes
1 small red onion minced
2 medium cloves garlic minced
3 tbs minced coriander
2 tbs lime juice
1-2 small jalapeno peppers minced - less if you wish
Place tomatoes, onion, garlic, coriander, lime juice and peppers in a medium bowl.
Add salt to taste and mix gently.
