Salsa  
6 large vine ripened tomatoes (roasted if possible) 
1-2 jalapenos, minced fine (roasted) 
1 large white onion, minced (roasted) 
1 bunch cilantro, chopped 
1-2 cloves garlic, minced fine (roasted) 
Juice of 1 lemon 
Juice of 2 limes 
2 tsp. cumin 
2 tsp. salt 
2 tsp. lemon pepper or Chili con limon seasoning 
2 tsp. adobo seasoning (or pepper, salt, paprika, & lemon pepper) 
1-2 tsp. sherry wine vinegar 
Combine all ingredients.  Recipe is best if roasted vegetables are used, but fresh vegetables work well.
