Spinach Dip

5 10 oz. Pkgs frozen spinach
1/2 cup butter
2 Tbsp margarine
1 med. Onion, chopped
2 Tbsp minced garlic
1 1/2 tsp salt (more or less to taste)
2 1 /2 cups sharp Cheddar cheese, shredded
1 cup Parmesan cheese
16 oz. Sour cream
1 1/2 cups heavy cream


Thaw spinach and squeeze out as much liquid as possible.

In a saucepan, melt butter and margarine and sauté medium minced onion and minced garlic. Add salt. Then slowly add Ceddar cheese, stirring until melted. Add Parmesan cheese, stirring until melted. When smooth add sour cream and heavy cream, stirring until mixture resembles a heavy cream soup. Add spinach, a half cup at a time, stirring after each addition, until mixture is heated through.Serve.



Spinach Artichoke Dip

2 packages neufchatel cheese
3/4 cup Parmesan cheese
1 cup mozzarella cheese, shredded
4 tablespoons mayonnaise
1/4 cup skim milk
3 packages frozen spinach, thawed and patted dry
14 ounces artichoke hearts, cut in 1" pieces


Preheat oven to 350 degrees.

Place first 5 ingredients in a dish with lid. Heat in microwave for one minute or until all ingredients can be stirred together. Mix spinach and artichoke heart pieces into cheese mixture. Bake 50 minutes covered, then 10 minutes uncovered.
