Spinach Dip

Spinach Dip

1/4 pound butter
1 cup onion -- minced
1/2 cup bell pepper -- minced
1/4 cup celery -- minced
2 tablespoons garlic -- minced
1 tablespoon parsley -- dried
2 tablespoons basil -- dried
1 teaspoon whole thyme
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon Cajun seasoning
2 tablespoons all-purpose flour
2 cups heavy cream
10 ounces frozen chopped spinach -- thawed
2 dashes Tabasco sauce


In a 2 quart saucepan, melt butter on high heat. When melted and bubbly, add onion, bell pepper, celery and garlic. Saute for 5 minutes or until onions begin to appear clear. Add parsley, basil, thyme, salt, pepper and Cajun seasoning. Stir well.

Add flour and stir in until blended. Add heavy cream and whisk until mixture begins to thicken. Cover, reduce heat to low and simmer for 15 minutes stirring frequently. Add spinach to mixture and stir in well. Cover and continue to simmer another 15 minutes. Remove from heat, stir in Tabasco sauce and allow to cool at room temperature for 1 1/2 hours.

For cold dip, refrigerate at least 6-12 hours. For hot dip, serve immediately.
