Tomato Salsa

4 to 5 large tomatoes
2 tsp garlic
1 tsp salt or to taste
1/2 tsp pepper or to taste
1 med. sized sweet onion
1 small green pepper
dash of hot sauce or red pepper flakes to taste


Blache the tomatoes in hot water and remove the skins. (Core them, make an x on the bottom with a little knife, plunge them into hot water til skin starts to crinkle, about 1 to 2 minutes (if tomatoes are at room temp) then plunge them into ice water.) Remove skins, cut in half and squeeze out seeds.

Dice the tomatoes. Dice the onion and green pepper add rest of ingredients. Mix.

If you want it hot, roast a jalepeno over a grill, a hot flame and lay it on the heating element on the stove or broil til black. Remove skin and seed it the chop. Use gloves for this process.
