Traditional Salsa

6 Roma Tomatoes
1 Jalapeno Pepper
3 Cloves Garlic
3 Small Onions
1 Yellow Wax Pepper
Juice of 1 Lemon


Remove and discard stems from peppers. Remove and discard outer membranes from onions and garlic. Dice tomatoes and onions and toss gently in medium bowl. Mince garlic and add to taste.

For a milder salsa, cut Jalapeno in half and remove seeds. Dice Jalapeno and yellow wax peppers and add a little at a time until desired heat level is achieved. (Wear rubber gloves to protect hands from pepper's spiciness!)

Squeeze in lemon juice. Add salt, pepper and chopped fresh cilantro (if desired) to taste. Prepared salsa yields approximately 3 cups.

*For a hotter salsa add more diced peppers and seeds.
