Concord Grape Wine

Concord Grape Wine

10 pounds Concord grapes
5 pounds sugar
1 teaspoon yeast nutrient (optional)
1 gallon water
1 package wine yeast


Strip grapes from stems. (There are some people who don't however the wood affects the flavor) Put grapes into fermenter and crush. Dissolve sugar in boiling water and pour over mashed grapes.

Ferment for 2 weeks, stirring daily and squeezing the stock. Strain through jelly bag; pour liquid into sterile bottles, cap with fermentation locks, and let stand for 1 month. At the end of the month the wine should be clear, and all sediment settled to the bottom of the bottle.

Siphon liquid into sterile gallon jugs with fermentation locks (balloons) and let stand for 2 months. At the end of this period the wine should have stopped working and should be read to rack.

Siphon it into sterile bottles and cork. Age the wine for 6-8 months.
