Elderberry Wine
4 qt. elderberries
5 qt. boiling water
4 lb. sugar
1/2 lb. seeded raisins
1 yeast cake
1/2 c. warm water
2 lemons -- sliced
2 oranges -- sliced
Wash berries and remove from heads. Place in large bowl and pour boiling hot water over them. Let stand for 20 minutes, then strain them through a cheesecloth. When juice is lukewarm, measure.
To each gallon of liquid, add the sugar, raisins, lemons, oranges and yeast dissolved in warm water.
Stir and put into a crock. Let work for 40 days.
Bottle the wine, but do not cap until it stops working.
Note: Be sure liquid is lukewarm when yeast is added.
