Hot Spiced Cider
Makes 12 servings

1 gallon pure apple cider
12 cloves
2 whole cinnamon sticks (each about 3 inches)
Half a lemon, sliced
2 tablespoons honey

Cook's notes: Depending on your preference for spiciness, experiment with the recommended simmering time; longer simmering intensifies the flavor.

Mix all ingredients in a large, nonreactive (preferably stainless steel or enamel-clad metal) pan. Let simmer over low heat for 30 to 60 minutes.

Strain and cool. Serve either hot or cold.
