Cocktail: Hot Buttered Rum

Hot Buttered Rum

1c. sugar
1c. firmly packed brown sugar
1c. sweet cream butter
2c. vanilla ice cream, softened
Rum or rum extract
Boiling water

In 2 qt. saucepan combine sugar, brown sugar and butter. Cook over low heat, stirring occasionally, until butter is melted and sugar is dissolved (6 to 8 mins.) Cool.

In large mixer bowl combine cooked/cooled mixture with ice cream; beat at medium speed, scraping bowl often, until smooth (1 to 2 mins.)

Freeze or can refrigerate for 2 weeks. If frozen, need to soften when ready to use. For each serving, fill mug with 1/4c. mixture, 1 oz. rum or 1/4t. rum extract and 3/4c. boiling water; sprinkle with nutmeg.
