Makes about 3/4 litre
500 g apricot jam
1/2 lt water
Juice and zest of 1 lemon
Put the apricot jam and water in a pan with the lemon zest, bring to the boil and boil for two minutes. Strain through a fine sieve, add the strained lemon juice and leave to cool. Serve in small glasses with an ice cube and a thin strip of lemon rind.
