Melon Seed Horchata 
Spanish and Mexicans make this drink with the seeds of cantaloupe or watermelon or even pumpkin seeds. It is said to be very refreshing. 
Makes about 1 litre 
200 g melon seeds 
1 lt water 
125 g sugar 
2 tsp ground cinnamon 
Ice 
Wash the seeds thoroughly and grind them, husks and all, very finely (I think you could do this in a food processor). Stir the seeds into the water with the sugar and cinnamon. Stand in the refrigerator, stirring occasionally, for about 3 hours or until the flavour of the seeds has gone into the water. Strain through a very fine sieve – serve with ice cubes.
