Fruit: Pineapple Water

Pineapple Water
Makes about 1.75 litres

You can purée the pineapple in a food processor

1 large pineapple – puréed
60 cl sugar syrup -- hot (see below)
Juice of 1 lemon
1 lt very cold water


Put the pineapple pulp into a basin, pour over the syrup and lemon juice, stir and cover for 2 hours. Drain through a fine sieve and add the cold water. Serve chilled.


Sugar Syrup
To make about 1.5 lt
500 g sugar
120 cl water
Place the sugar and water in a pan and heat gently until all the sugar has dissolved. Then bring to the boil and boil without stirring for 1 minute.


Pineapple Peel Drink
Makes about 1 litre – use the peel left over from the Pineapple Water recipe.

The peel of 1 large pineapple
1 lt water
4 cloves
60 g sugar


Chop the pineapple peel and cover with water and bring to the boil in an enameled or glass pan (not aluminium). Boil gently for 10 minutes. Remove from the heat, add the cloves and sugar (use a bit more or less depending on your taste). Stir and leave to stand until cold. Strain and serve well chilled.
