Atole

Atole is an Aztec drink that is normally drank on cold mornings in much the same way as some people drink coffee. There are two types of atole, wheat and corn. They are both prepared in much the same way. If atole flour or corn meal can't be found, you can make your own. Take the cornmeal in a shallow, ungreased baking pan and bake, stirring occasionally, for about 10 minutes.

1 cup atole blue cornmeal (or atole flour)
1/3 tsp ground cinnamon
1/4 tsp salt
2 cups water
3 cups milk
1/2 cup honey or sugar


Mix the cornmeal, salt and water in a 3 quart saucepan. Heat to boiling, stirring constantly, and reduce heat to low. Stir in the milk and honey. Heat to a simmer stirring constantly. Do not boil.
