Rich and Creamy Egg Nog

Rich and Creamy Eggnog

4 cups milk
1 (3.4 oz pkg) vanilla pudding mix (instant)
1 (8 oz) carton (1 cup)refrigerated or frozen egg product, thawed
1 teaspoon vanilla
1 teaspoon rum extract or 1/4 cup light rum
1/4 tsp salt
1/4 tsp nutmeg
Whipped cream topping if desired


In a large bowl, combine 2 cups milk and pudding mix and beat one minute or until smooth. Add rest of milk and rest of ingredients and beat well. Cover and refrigerate until serving time. Serve with whipped cream if desired and sprinkle with freshly grated nutmeg.
