Punch: Mock Margarita Punch

Mock Margarita Punch

12 oz. can frozen lemonade concentrate, thawed
12 oz. can frozen limeade concentrate, thawed
1 cup powdered sugar
6 cups finely crushed ice
4 egg whites, beaten slightly
Green food coloring if desired
1 quart (4 cups) club soda, chilled
Lime slices and coarse salt to garnish cups


In a 4-quart, non-metal container, combine concentrates, powdered sugar, crushed ice, egg whites and food coloring; mix well. Cover and freeze, stirring occasionally. (Can be frozen over night)

Before serving, let stand at room temperature about 30 minutes to thaw slightly, stirring occasionally.

Spoon 2 cups of slush mixture into blender container, add 1 cup of the club soda. Blend until frothy, about 15-30 seconds. Continue with batches and serve in a punch bowl or in pitchers.

To serve, rub rim of glass with lime slice and dip in coarse salt; fill glass and garnish with lime slice.

Makes 24 (1/2-cup) servings.

Note: Here is a non-alcoholic margarita punch that tastes so much like the real thing that your guests will think the tequilla is included! For *spiked* punch you can add tequilla if desired.
