St. Patrick's Punch
1 (3 oz.) pkg. lime jello mix
2-1/2 cups sugar
1 cup boiling water
7 cups cold water
1 (12 oz.) bottle lemon juice
1 (46 oz.) can unsweetened pineapple juice
2 to 3 drops green food coloring
1 tsp. almond extract
1 qt. ginger ale (cold)
Dissolve gelatin and sugar in boiling water in a large saucepan; add cold water, lemon juice, pineapple juice, food coloring and almond extract.
Freeze punch; remove from freezer several hours before serving so that it will be slushy. Pour into punch bowl; add ginger ale. No ice is needed. Any color of gelatin and food color may be used to suit the occasion. Yields 1 gallon.
