Baked Egg Casserole with Smithfield Ham

1/4 lb. Smithfield ham or 8 slices of Canadian bacon
1/2 lb. Swiss cheese, sliced
8 eggs
1 cup cream
1/3 cup grated Parmesan cheese


Preheat oven to 450 degreesF.

Line a 9x13 casserole with either ham or bacon. Top with a layer of Swiss cheese. Break eggs onto cheese in two rows of 4 eggs each, evenly spaced, being careful not to break yolks. Drizzle cream over egg white until yolk peeks through.

Bake at 450 for 10 minutes. Sprinkle with Parmesan cheese and bake for 10 minutes more. Cut into squares with one egg in the center of each square.
