Grammy's Own Pickled Eggs

12 hard-boiled eggs
1 1/2 cups water
1 1/2 cups white vinegar
1 small onion, sliced
1 tbsp. salt
1 tsp. whole black peppercorns
2 small pieces ginger root


Place the eggs in a pot and fill with water. Bring water to a boil and then simmer for 12 minutes. Remove from heat, drain off hot water and cover with cold water. Peel the eggs.

Boil together in a large pot 1 1/2 cups water, 1 1/2 cups vinegar, 1 tbsp. salt, 1 tsp. whole black peppercorns and 2 small pieces of ginger root for 5 minutes. Drain through a sieve and discard the spices. Cool the liquid.

Place slices of onion alternately in a one litre jar with the eggs. Top with the vinegar. Cover and let stand a minimum of one week before eating.

Note: One dozen eggs fit perfectly in a one litre jar.
