South of the Border Egg Bake
12 servings

12 eggs
1/2 cup all purpose flour
1 teaspoon baking powder
1/2 teaspoon salt (if desired)
1 pound (4 cups) Monterey Jack cheese, shredded
1 1/2 pints (3 cups) small curd cottage cheese
1/2 cup (1 stick) butter, softened
4 ounces fresh (hot or mild) green chilies, seeded, chopped or 1 (4 1/2 ounce) can chopped green chilies, drained
1 (2 ounce) jar chopped pimento, drained
1 ( 7 ounce) can whole kernel corn, drained


Heat oven to 350 degrees. Butter 13 x 9 inch (3 quart) baking dish.

In large bowl, beat eggs til light. Add all remaining ingredients and mix well. Pour into buttered dish.

Bake at 350 degrees 45 to 55 minutes or til puffy, brown and a knife inserted in center comes out clean. Serve hot
