Kernels from 6 fresh ears of corn
3 tomatoes, chopped
1 onion, chopped
1 red pepper, chopped
2 garlic cloves, crushed
1 slice sweet pumpkin, cubed
salt to taste
olive oil

Saute the onion, pepper and the garlic cloves in the oil until the onion is translucent. Add the corn to the saucepan (if you have a wok, better!). Then add pumpkin and salt to taste. Lower the heat and cook until the pumpkin is done (pierces easily with a fork.) Serves: 4
