Please refer to my post on Axum for the recipe for spiced butter and berbere sauce.
Minchet Abish
1 Lb. Ground beef, or beef cut into cubes
1 large, red onion
1 Tablespoon berbere sauce or to taste
water
1/2 cup spiced butter
1 Clove of garlic, crushed
A few cloves
1/4 teaspoon grated ginger
1/2 teaspoon ground cardamom
1/2 cup red wine
Salt and pepper, but go easy on the pepper
1 Cup cottage cheese
Brown onions in a little of the spiced butter but do not fully cook. Add meat and a little more spiced butter and brown. Add a little water and cook for 20 minutes. Mix the rest of the spiced butter, salt, pepper, garlic and the spices in a bowl and set aside. After 20 minutes add the contents of the bowl and continue to cook until the sauce is thick and the meat is tender. Serve hot with the cottage cheese on the side.
I suggest eating about half of it without the cheese, then mix the cheese into the other half. I just can't decide if it's better on it's own or with the cheese mixed in.
