Cuban Turkey

2 (12-18 pound turkeys) cleaned and all giblets, gizzards, etc. removed

Marinade:
6 garlic cloves mashed with two teaspoons salt
2 tablespoons fresh cilantro, chopped fine
2 teaspoons ground cumin
1/4 teaspoon black pepper
1 teaspoon oregano
1/3 cup sour orange juice (or mix equal parts orange juice and lime juice)
Onion Slices


Mix together all of the marinade ingredients. Rub the turkey inside and out with the marinade. Place the turkey in a roasting pan and cover with onion slices. Marinade the turkey in the refrigerator for at least two hours, preferably overnight.

Roast the turkey at 325° F until fully cooked. (Check with a meat thermometer (poultry setting) or wait for that little button to pop out.) Do not over cook.
