Kolachkis (Czech Walnut Pastries)

Prep Time: 1hr. 10 mins. plus chilling
Baking time: 25-30 mins. per batch

1 (8 oz.) pkg. cream cheese
1 cup butter, or margarine
1 tsp. vanilla
2 cups all purpose flour

Filling:
1 lb. walnuts, ground fine
6 Tbsp. butter, or margarine, melted
1/4 cup milk
1/2 tsp. vanilla
6 Tbsp. sugar


Combine cream cheese, butter, and vanilla in large bowl. With pastry blender, cut in flour 1 cup at a time until dough is thoroughly mixed. Shape into ball. Wrap and refrigerate overnight.

Filling: Combine all ingredients in large bowl.

Preheat oven to 350 degrees.

Divide dough in half; keep one half refrigerated. Sprinkle work surface with powdered sugar. Roll 1 dough half into 12x10 inch rectangle, adding powdered sugar as needed. Spread 1/2 of filling evenly over dough. Cut into 2 in. squares, and roll up jelly roll fashion. Place seam side down 1 in. apart on ungreased cookie sheets.

Bake 25-30 minutes, until lightly browned on bottom. Repeat with remaining dough and filling. Transfer to wire racks to cool. Dust with powder sugar , or decorative icing.

Makes 5 doz. 130 calories each.
