Czechoslovakian Cookie Rolls

1 cup lightly salted butter (or margarine) at room temperature
1 cup commercial sour cream
1/2 teaspoon salt
2 cups all purpose flour
1 3-1/2 ounce package flaked coconut (1 cup)
1 12-ounce jar apricot preserves
10 candied cherries cut into small pieces
1/2 cup chopped walnuts
Confectioners' sugar (optional)


In a medium sized mixing bowl, beat butter until creamy. Mix in sour cream and salt and then stir in flour 1 cup at a time. Cover dough and chill until firm, 4 hours or more.

Combine remaining ingredients except confectioners' sugar.

Heat oven to 350 degrees.

Divide dough into 4 parts. On a sheet of wax paper spread on a lightly floured board, roll out 1 part to a 1/8 inch thick rectangle, about 12 x 9 inches. Spread one fourth of filling over crust leaving 2 inches plain on 1 of long sides. Roll up dough like a jelly roll - rolling toward area where is no filling. Place roll on a greased baking sheet. Repeat with remaining crust.

Bake about 45 minutes until pale gold. Remove from oven and transfer to a cutting board and while warm, cut rolls into (approximately) 1/2 inch slices. (Crust tend to crumble). Sprinkle with confectioners' sugar. Serve warm or at room temperature.
