Apfelkuchle (Apple Cakes)
A Swiss treat, from the book "The Secret to Tender Pie".

4 eggs, separated
4 Tablespoons sugar
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon vanilla
4 Tablespoons melted butter
1 cup flour
3/4 cup milk
2 cups chunky applesauce
Additional butter for frying

Grease griddle with butter and begin to heat.

Beat the egg whites until stiff peaks form.

Beat the egg yolks; add sugar, baking powder, salt, vanilla and melted butter. Mix well. Whisk in the flour and milk alterately. Mix in the applesauce, then gently fold in the beaten egg whites.

Cook on a hot griddle, turning once, until browned. Serve with butter and cinnamon sugar - not syrup.

Serves 4.

(Note: to increase, go by 1/4 recipe per person.)
