Finnish Cooky Sticks (Suomalaisel Puikot)
1 cup soft butter
1/2 cup sguar
1 egg
1 tsp. almond extract
dash salt
3 cup sifted white flour
Coating:
1 egg, beaten
sugar
1/2 cup finely chopped almonds
Preheat oven to 375° F. and lightly grease cookie sheet.
Cream the butter and sugar together until blended. Add the egg, almond extract and salt. Sift flour into the mixture, blend well. Work the dough with hands until smooth.
Shape into long rolls, about 1/2 inch thick. Cut into 2 1/2 inch lengths and roll first in the beaten egg, then in the sugar, then in the almonds.
Place on a lightly greased cookie sheet. Bake at 375° for 8 minutes, or until just barely golden.
Makes 6 dozen.
Notes: A rich, melt in your mouth cookie with an almond coating. Made from one of the oldest Finnish cookie recipes.
Country Cookies (Talonpoikaiskakut)
1 cup butter
1 cup sugar
2 tbsp. dark molasses
3/4 cup finely chopped almonds
2 cup white flour
1 tsp. soda
dash salt
Cream the butter and sugar together until light. Add molasses and nuts. Stir in flour, soda, and salt until well blended.
Chill slightly if the dough is too soft to work with.
Shape into 2 rolls, each about 1 1/4 inches in diameter.
Refrigerate dough, and bake at your convenience.
Just before baking preheat oven to 350° F , cut into 1/4 inch thick slices, place on greased baking sheet.
Bake at 350° for 10 minutes, or until very lightly golden.
Makes about 100 cookies.
Notes: Described as a rich refrigerator cookie.
