Frango na Pucara 

1 chicken, cut up 
1/2 lb bacon 
12 small, peeled onions 
1 red pepper, cut into julienne strips 
4 tomatoes, seeded and quartered 
2 T Dijon mustard 
3 cloves garlic, minced 
1 c port wine 
1 cup Portugese or Spanish brandy 
2 c dry white wine 
freshly ground black pepper 
1/2 c fresh parsley, chopped 

Preheat oven to 400. Cook bacon and brown chicken on all sides. Put all the
ingredients into a large casserole in the following order: 

Slices of bacon covering the bottom Chicken Vegetables, all around the chicken Cover chicken with mustard and minced garlic Pour wines and brandy over Add salt and pepper

Bake in oven uncovered for 30 minutes. After 30 minutes, cover and reduce heat to 200. Cook until just tender. Top with parsley and serve with rice.
