Lithuanian Cheesecake

2 lbs. cottage cheese
4 Tbsp. flour
1 cup sugar
1/2 ts. salt
4 eggs, separated
1 cup milk
2 tsp. grated lemon rind
pastry for 2 crust pie crust, unbaked

Preheat oven to 450 degrees F.

Mix cottage cheese, flour, 1/2 cup sugar, salt and well beaten egg yolks. Beat egg whites until frothy. Gradually add remaining sugar into egg whites. Beat until very stiff. Fold in cottage cheese mixture and turn into pastry lined 9x13 pan. Bake at 450 degrees for 15 minutes, then reduce heat to 325 degrees and bake 45 minutes.

Makes 12 to 15 servings
