Moroccan Honey-Glazed Chicken

1/3 cup honey
2 tablespoons lemon juice
1 teaspoon grated lemon peel
1 teaspoon ground cumin
1 teaspoon ground cinnamon
1 lemon, thinly sliced
3 1/2 to 4 pounds chicken pieces


Preheat oven to 350 F.

In small bowl, combine all ingredients except lemon slices and chicken until thoroughly blended.

Loosen skin from chicken pieces. Place chicken in baking pan, skin-side up. Spoon half of glaze under skin of chicken pieces. Slide lemon slices under skin. Brush remaining glaze over tops of chicken pieces.

Bake at 350 degrees for 25 to 30 minutes, or until chicken is cooked through and juices run clear. Remove lemon slices, if desired, before serving.

Servings: 4.
