Portugu�s Linguisa 1
5 lbs. coarse ground pork butt
2 Tbsp. salt
1 Tbsp. sugar
8 cloves pressed garlic
1/4 cup wine vinegar
4 Tbsp. paprika
I Tbsp. black pepper
3 tsp. marjoram
1 cup red wine
Combine all ingredients and mix well. Stuff into hog casing. To cook, fry in Rhine wine or bake.

1 Tbsp. ground coriander
I Tbsp. paprika
1/2 tsp. ground cinnamon
1/2 tsp. cloves
1/2 tsp. allspice
1/2 cup wine vinegar
1/2 cup water
Combine all ingredients; mix well and stuff into hog casing or make patties.
