8 large potatoes, peeled and grated, julienne-size
1 smallish onion, grated
1 small tin anchovies, with sauce
2 cups cream
Preheat oven to 200C. Put a layer of potato into a medium-size ovenproof pot (if it is wide and shallow, there is more delicious crust). Then a thin layer of onion, then half of the anchovies. Add another layer of potato, onion and anchovies, and last a layer of potatoes.
Mix the anchovy sauce with the cream and pour it on the potato mix. Put into the oven for appr. 30 minutes, or until the potatoes are soft and the surface is golden brown. Serve with green salad. This dish can be lightened by using only 1 cup cream and 1 cup milk, but then it will be soggier.
