Swedish Oatmeal Cookies

1 cup all-purpose flour
1/2 cup sugar
1/2 cup brown sugar
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup butter, softened
1/2 teaspoon vanilla
1 egg
1 1/2 cups rolled oats

Topping:
1/3 cup sugar
1/4 cup butter
1 tablespoon corn syrup
1/3 cup chopped almonds
1/4 teaspoon almond extract


Heat oven to 350'F.

In large bowl combine all cookie ingredients except rolled oats; beat 1 minute; stir in oats.

In small saucepan combine sugar, butter and corn syrup. Bring to boil stirring until butter is melted and sugar dissolved. Add almonds and extract; set aside.

Drop cookie dough by rounded teaspoons, 2 inches apart onto ungreased baking sheet. Bake for 8 minutes.

Remove from oven and spoon 1/2 teaspoon topping on each cookie. Return to oven and bake 6 minutes or until golden brown. Let cool a few minutes on pan before removing.

NOTES : Make topping first and let cool. It's much easier to handle.
