Bass: Lake Mead Bass

Lake Mead Bass

2 pounds of filet of Bass
1 can French onion soup
2 cups Uncle Bens rice
salt and pepper
1 1/2 cup water
2 strips bacon
1/2 teaspoon thyme


Fry strips of bacon in skillet (could use bacon fat). When crisp, remove and swish fat around bottom of pan. Place filets in bacon fat and brown on each side. Add can of French onion soup and cover skillet. Simmer 5 minutes. Add water and seasonings. Let come to a boil. Add rice, cover and let rest 5 minutes. Serve.
