Catfish with Pecan Rice

 Catfish with Pecan Rice

  1/2 C. cornmeal 
  4 small catfish, cleaned and skinned 
  Garlic, salt, & pepper to taste 
  1/4 C. peanut oil 

  In a shallow bowl, combine the cornmeal & seasonings. Pat the catfish dry, dredge it in the
  cornmeal mixture. Arrange the fish on a baking sheet & drizzle with peanut oil. Bake 15-20
  minutes until flaky. Serve over Pecan Rice. Place pecans halves down center of fish if
  desired as topper. Place slices of lemon on plate if desired. 

  Pecan Rice

  1 1/2 C. brown rice 
  3T. butter 
  1 med. onion, chopped 
  1 C. chopped pecans 
  1/4 C. chopped fresh parsley 
  1 T. grated fresh ginger root 
  1 T. chopped fresh basil 
  Salt & pepper to taste 

  Steam the rice for 45 minutes until cooked. Set aside. Melt the butter & stir in the onion.
  Sauté 5 minutes. Combine with the rice, pecans, herbs, & seasoning. Stir, simmer10 minutes.
