Cod, Leeks and Potatoes in Orange-Tomato Sauce

1 tablespoon olive oil
3 large leeks, rinsed, trimmed, and diced
1 large sweet red pepper, cored, seeded and diced
3 cloves garlic, slivered
3 medium-size all-purpose potatoes, peeled and cubed
1 cup water
1/3 cup pitted green olives, quartered
1 medium -size tomato, chopped, with its juice
1/2 cup orange juice
4 cod fillets
3 tablespoons minced parsley or fresh cilantro (coriander)


In a 12 inch skillet, heat the oil over low heat. Add the leeks and cook, uncovered, stirring occasionally until soft. Add the pepper and the garlic and cook for approximately 2 minutes. Add the potatoes, water and olives, cover and simmer for 20 minutes. Stir in the tomato and orange juice.

Lay the fillets on top of the vegetable mixture, cover and cook for 10 to 12 minutes or until the fish flakes easily when tested with a fork.

Transfer the fish to warm dinner plates.

Stir the parsley into the sauce, then spoon the sauce over each fillet.

Serve with a green salad and Four-Grain Rolls (recipe to follow)
