Crispy Cod Cakes
low calorie recipe from the Prevention Magazine

3/4 pound cod fillet
1 teaspoon olive oil
2 tablespoons minced onions
1 tablespoon minced green peppers
1 tablespoon minced pimientos
1/2 cup plus 1 tablespoon bread crumbs
1/2 teaspoon ground mustard
1/2 teaspoon Worcestershire sauce
3 tablespoons mayonnaise, lowfat
1/4 teaspoon paprika


Place fillet in a baking dish and bake in a 375 degree oven for 10 to 15 minutes, or until it flakes easily. Remove from the oven and let cool. Flake into small pieces.

In a skillet, heat oil. Add onions, peppers and pimentos and saute until soft.

In a medium bowl, mix together flaked fish, sauteed vegetables, 1 tablespoon bread crumbs, mustard, Worcestershire sauce and mayonnaise. Form mixture into 4 round flat cakes.

In a shallow bowl, mix 1/2 cup bread crumbs with paprika. Gently coat cakes on all sides with bread crumb mixture.

Spray a baking pan with vegetable cooking spray. Place fish cakes on the pan and bake in a 450 F oven for 10 to 15 minutes, or until cakes are golden brown.

4 servings at 169 calories per serving.
