Macadamia Crusted Fish

2 pieces fish fillet (about 3/4 lb.)
1 cup chopped macadamia nut
1/2 cup seasoned bread crumbs
1 large egg
squeeze of lemon juice
2 tsp. Worcestershire sauce (Preferably White Wine)
2 tsp. dry sherry
2 tsp. soy sauce
1 tsp. thyme
1 tsp. cajun seasoning
Salt & pepper to taste
Oil for frying


Put the sherry, Worcestershire, soy sauce, lemon juice, thyme, and cajun seasoning in a bowl and mix. Add fish fillets and let marinate for 45 minutes to an hour.

Place macadamias and breadcrumbs in a flat dish. Beat egg in a bowl. Take fillets out of marinade and pat dry. Salt and pepper and dip into egg then roll in nut/crumb mixture making sure they are entirely coated. Sort of push the coating into the fish to make it stick.

Heat oil in a skillet on med. high heat. When almost smoking, add fish and cook until you can smell the nuts, but not burnt smelling. Turn over and repeat.
