4 pounds fish
3 sliced onions
2 cloves garlic
4 diced carrots
1 sliced green pepper
3 sliced stalks celery
2 cups tomatoes (canned or fresh)
dill, parsley, salt and pepper
1/2 cup white wine.
Sprinkle fish with lemon juice, salt and pepper, all over. Bake in a casserole dish at 350 degrees for 10 minutes.
Meanwhile, saute onion and garlic in 3/4 cup olive oil, about 5 minutes, add carrots, green pepper, celery, tomatoes and pinches of dill and parsley, salt/pepper to taste and the 1/2 cup wine. Cover and simmer for 15 minutes.
Pour over the baked fish and bake an additional 45 minutes or until fish flakes easily. Nice over rice.
