Rolled Stuffed Fillets
1/4 cup chopped onion
1/4 cup butter
4 cups bread crumbs
1/2 tea. salt
dash of pepper
1 tea. poultry seasoning
1/2 cup mayonnaise or salad dressing
1 pound fish fillets (halibut, cod, etc.)
another 1/2 cup mayonnaise
Cook onion in butter til tender but not brown. Mix in bread crumbs and seasonings. Blend in 1/2 cup mayonnaise.
Cut fillets in four uniform strips, about 1 1/2" x 8 inches. Spread each with bread stuffing, roll in jelly roll fashion. Place in greased custard cups (or use muffin tins) Put cups in shallow pan.
Bake in 350* oven for 20 minutes. Spread with 1/2 cup mayo and bake 20 minutes more. 4 servings.
