Cod, Pollock or Haddock
1-1 1/2 lbs of fish
1/2 cup finely chopped onion
2 tbl butter
2 tbl flour
1/2 tsp salt
1/2 tsp pepper
1 1/2 cups milk
1 cup grated sharp cheddar cheese, grated
4-6 oz. sliced mushrooms
1 cup frozen peas
1/2 thinly sliced sweet pepper (red is pretty)
1 1/2 cups soft bread pieces with crusts
2 tbl melted butter
In a skillet simmer fish in a small amount of water for 12-15 minutes, until fish flakes. Break fish into chunks and put into a 9 by 9 or 8 by 12 baking dish. Set aside.
In a large sauce pan, cook onion in 2 tbl of butter until tender. Blend in flour, salt and pepper. Add milk at once. Cook over medium heat stirring constantly until thick and bubbly.
Remove from heat and add cheese, stir until melted. Combine cheese sauce and vegetables, pour over fish. Combine crumbs with butter and put over top.
Bake at 350 for 30-40 minutes, until filling is hot and bread slightly browned. Serves 4-6.
