Frutti di Mare
2 cloves of garlic, minced
6 large mushrooms, chopped
1 large onion, chopped
1 tablespoon basil
1/2 cup chicken broth
1/3 cup lemon juice
1/4 cup olive oil
28 ounces tomato sauce
12 littleneck clams, scrubbed
1 lobster (about 1-1/4 pounds), cleaned and cut into 2-inch pieces
12 mussels, beards removed and shells scrubbed
1 pound bay scallops
16 ounces of linguini, cooked and drained
1 tablespoon fresh parsley, chopped
In hot oil, sauté garlic, mushrooms, and onion until tender. Add basil, chicken broth, lemon juice, olive oil, and
tomato sauce. Simmer for 20 minutes.
Add seafood, bring to a boil, then cover and simmer until seafood is cooked (about 8 minutes). Serve atop cooked linguini, sprinkled with parsley. Feeds 6 to 8.
