Seafood Cakes

1/2 lb shelled crab meat
1/2 lb baby shrimp
1/2 bunch coriander leaves (cilantro), chopped
3 green onions, chopped
1 hot red pepper, seeded and chopped
1 egg
3 tbsp mayonnaise
1 cup soft fresh bread crumbs
salt and white pepper to taste

Drain crab meat thoroughly. In large bowl, mix with shrimp, cilantro, green onions, red pepper, egg, mayonnaise and bread crumbs. Season with salt and white pepper (if there is a problem with eggs in your area, taste and adjust before adding the egg).

Divide crab mixture into 6 balls and press into patties . Refrigerate patties, covered, until ready to use.

In a dry nonstick skillet over medium heat, brown patties on both sides. Transfer to baking sheet and bake at 350 F for 5 minutes to heat through. Served with a chilled fruit salsa or a hot and spicy sauce.
