Combination: Shrimp and Crab Supreme

Shrimp and Crab Supreme

1 onion sliced
1 tablespoon dill seed
2 bay leaves
6 peppercorns
2 cans beer
2 pounds raw shrimp in shells
3 packages frozen chopped spinach
3 tablespoons grated onion
2 tablespoons lemon juice
Salt, pepper and cayenne to taste
12 ounces frozen crabmeat, thawed
8 tablespoons butter
1/4 cup flour
2 cups half and half
1 teaspoon garlic juice
2 teaspoons Worcestershire sauce
1/4 teaspoon hot sauce
1/4 teaspoon paprika
8 tablespoons sherry
Grated Parmesan cheese


Preheat oven to 325 degrees.

Combine onion, dill seed, bay leaves, peppercorns and beer in a deep pot and bring to a boil. Add shrimp and boil 5 minutes. Drain, let cool, and shell. Set aside

Cook spinach, drain and mash as dry as possible. Season with grated onion, lemon juice, salt, pepper and cayenne.

Make a cream sauce of butter, flour and cream. Add garlic juice, Worcestershire, hot sauce, paprika and sherry.

In a shallow casserole, alternately layer the shrimp, crabmeat, spinach and cream sauce. Generously sprinkle grated Parmesan cheese over top and heat for about 30 minutes.

Serves 6.
